Quality
Gelateria e Pasticceria Rosa produces ice cream and homemade pastries which do not contain vegetal and hydrogenated fats.
The basic ingredients in the production of ice cream and pastry are skimmed milk, cream, sugar, dextrose, invert sugar.
The high quality of ice cream and pastries prepared on the premises of Gelateria Rosa in Viadana is guaranteed by the total absence of trans-fats which are extremely dangerous for the human body.
Hydrogenated fats and margarine are industrially synthesised compounds which were invented at the beginning of the century and which were largely employed in the food industry for pure economic reasons:
- they cost less than high quality fats, such as butter and cream;
- they become rancid slowly allowing a longer life of products;
- they have a melting point which is higher than in vegetal fats; thus, they are perfect as a substitute for butter.
Why are they dangerous for the human body?
Hydrogenated fats and margarine contain trans fats which affect the human body in the following way:
- They reduce HDL cholesterol and increase LDL cholesterol;
- They increase the risk of heart diseases more than saturated fats;
- They reduce the biological value of breast milk;
- They cause lower weights in children ever since their births;
- The raise the level of insulin as a consequence of the glycemic state;
- They interfere with the immune system by reducing the efficiency of B cells and increasing the proliferation of T cells;
- They decrease the level of testosterone;
- They inhibit some important enzymatic reactions;
- They affect the permeability and the fluidity of cell membranes;
- They affect the composition and the number of adipocytes (fat storing cells );
- They interfere with the metabolism of essential fats acids (Omega-3);
- The increase the production of free radicals.
Where can be found
Trans fats can be found in many industrial and processed products. However, it is not possible to exclude them from our diet. Trans fats can be found in all food products which include the following ingredients: hydrogenated vegetal oil, partially hydrogenated vegetal oil, hydrogenated vegetal fats, partially hydrogenated vegetal fats, margarine.
The following products which are very common in our diets must be kept under control:
Ready-made bakery products
Cookies, brioche, buns, tarts, pies, potato chips etc. The presence of trans fats is displayed among the ingredients listed on the packaging.
Homemade bakery products
It is also very important to check all confectionery products: they are prepared with trans fats in 90% of cases. All bakeries and pastry shops must display the ingredients of all their products. If not we suggest to ask the shop assistant whether margarine and hydrogenated fats are used. If they are, you should not buy any products. Unfortunately, you will find that it is extremely difficult to find products made with butter instead of margarine.
Homemade ice cream
Although such fats are not largely employed in ice cream preparation like in other products the situation is still risky.
At the present time, most ice cream shops use industrial compounds which often contain trans fats, which present the advantage of making melt the ice cream slowly.
You should verify, like for the pastry shops, whether trans fats are listed among the ingredients. Then, you should make your own list of high quality ice cream shops which do not use trans fats.
In this case, the absence of trans fats means quality ice cream.
